Place the grated zucchini in a clean tea towel and squeeze to remove excess liquid. Set aside.
Place the cauliflower florets in a food processor and pulse until the cauliflower resembles rains of rice. You may need to do this in batches.
Head the oil in a large wok over medium heat. Add the onion and fry fro 2 minutes, Add the carrot, zucchini and herbs and fry for 2 more minutes.
Add the cauliflower and parsley and stir-fry for 3 minutes until the the cauliflower is cooked through.
Season to taste and serve warm.
