Garam Masala
Ingredients
Garam masala is an Indian spice mixture used as a curry seasoning or condiment with vegetable dishes and grills.
Method
Step 1
Heat a small frying pan over low heat
Step 2
Add Peppercorns, cloves, coriander, cumin, and cardamom seeds to the pan and agitate until aromatic (about 45 seconds)
Step 3
Transfer to a mortar and add the fennel seeds, and cinnamon stick; grind to a semi-fine powder; add the grated nutmeg
Step 4
Allow the spice mixture to cool completely before spooning into an airtight storage container
Step 5
Seal and store in a cool, dry place for up to 3 months
